I’ll make a confession, I love cookbooks. I read them like novels. In fact, I have to stop myself from buying them. Once I had so many that my bookshelves were starting to bend. I’ve since donated many but there are three that I’ll never give away.

If you’re watching your food budget and who isn’t? These are three books every kitchen needs. What I like about all of them is the fact that they prove that cooking doesn’t have to be hard or an extra challenge just because you’re watching your pennies. Plus, low-cost meals can be delicious too.

The first one is Budget Bytes by Beth Moncel

Beth knows a thing or two about cooking on a shoestring and I’ve yet to try one of her recipes I didn’t like.

Budget Bytes has 100 recipes and yes, I’m slowly making my way through all of them. Everything from breakfast dishes to desserts. Ones I’ve tried and loved include Coconut Chicken Curry. Pork with Balsamic Cranberry Sauce. Pasta with Tuna and Olives. The Parmesan-Herb Drop Biscuits I make all the time and yes, they disappear quickly.

My second must have book is $10 dollar dinners by Melissa d’Arabian.

This is a heavy cookbook that is filled with beautiful photos that make you want to head to the kitchen ASAP. I was actually shocked that these meals were budget ones.

Some I’ve tested and can recommend are the Smoked Tuna Spread. Roasted Tomato Soup. Chicken Meatballs. Shrimp Scampi Linguine and Black Bean Nacho Burgers…a great meal when money really is tight.

And my final pick for must have cookbooks is Essential Pantry Cookbook by Jen Chapin.

While this one isn’t necessary a budget one, I use it to make lots of things like sauces, soups, salads and other goodies to save money. The more basic things you know how to cook, the more you’ll save money.

This one has 80 recipes and yes, I’m once again making my way through them. Some I love are Fish Cakes with Lemon-Dill Aioli. Broccoli-Cheddar Soup (one of my favorite go-to soups now). Peanut Noodle Salad. I also love the dressing recipe with its variations and I also use the basic muffin recipe and add whatever’s on hand or leftover.
